Today is National Whipped Cream Day!

Today is National Whipped Cream Day! This is a day to be celebrated everywhere with kids squirting Whipped Cream right from the can into their mouths! WHOO HOO! And, well, I am sure that there are many other interesting ways to celebrate this day...

This recipe for Lemon Whipped Cream from www.Epicurious.com sounds really lovely and refreshing. I can just taste this as a fresh twist on strawberry shortcake or for dipping fresh fruit into!

Lemon Whipped Cream

Yield: Makes about 1 1/2 cups

Ingredients:

1 cup chilled heavy whipping cream
2 tablespoons sugar
1 tablespoon finely grated lemon peel
2 teaspoon fresh lemon juice

Preparation:

Combine all ingredients in medium bowl. Using electric mixer, beat to soft peaks. (Can be made 4 hours ahead. Cover and chill. Rewhisk before using.)

Or, even Espresso Whipped Cream, also from Epicurious! This sounds so wonderful to top a lovely coffee drink!

Espresso Whipped Cream

Yield: Makes about 2 cups

Ingredients:

1 cup chilled whipping cream
3 tablespoons golden brown sugar
1 teaspoon vanilla extract
1 teaspoon instant espresso powder

Preparation:

Beat all ingredients in medium bowl to soft peaks. (Can be made 4 hours ahead; cover and chill.)
